The restaurant was itself a reboot. Owner Eric Chen had previously run Ko, a cult-favorite AYCE sushi spot on the Mission, before that concept shuttered in early 2025. Party Pig was the return: a bigger space inside a former Round Table Pizza — identifiable by the faux-neon "Fresh Salad" sign that never came down — with the same operating philosophy, premium fish at working-person prices, plus a hot pot program to set it apart. Soup bases ran from kimchi miso to hakata tonkotsu; proteins included American wagyu and Kurobuta pork belly. Happy hour tabs ran $19.95 per person across two daily windows (4:30–6 p.m. and 9–11 p.m.); regular pricing was $29.95 — still below Ko's final $32, per The SF Standard's reporting at opening.

Chen told The SF Standard in May 2025 that business out of the gate was overwhelming — crowds running past midnight — but acknowledged his partners were skeptical the AYCE model was "a dependable way to turn a profit." He was banking on the larger footprint, a $20 surcharge for tables exceeding 90 minutes, and a fee on uneaten food to fix Ko's margin problems.

The corporate entity Partypigsf Inc. was filed with California on April 28, 2025; an on-sale beer-and-wine license (type 41, #00665716) was issued May 8, 2025. No permit violations, tax liens, or ABC disciplinary actions appear in public records. Whether the margins ever worked, Chen hasn't said.
