Russian Hill is getting a handroll shop that owes more to Melbourne than to the sushi bar. Handroll Hawker, a casual grab-and-go concept from Australian filmmaker Romi Trower, is slated to open this fall at 2360 Polk St. at Union, and it is betting a corridor already thick with sushi counters can make room for a different kind of roll.

Trower, a Melbourne native, moved to San Francisco in 2019 and, by her own account to tablehopper, has been missing the Australian-style handroll ever since. The distinction matters: where SF diners meet handrolls as temaki — the cone-shaped seaweed wraps served à la minute at sushi bars like Saru, two blocks down at 2206 Polk — Trower's version is cylindrical, portable, and built for a lunch line, the way the format runs as an everyday staple in Melbourne and Sydney.

To translate that into a working San Francisco room, Trower brought on the Flour + Water Hospitality Group as consulting partners — a notable outside hand for a first-time operator entering one of the city's most competitive food strips. The buildout has been underway for months; Hoodline first flagged construction at the address in March. City records ground the timeline further: Handroll Hawker LLC registered its business at 2360 Polk St. on January 12, 2026, according to DataSF.

The room is being styled for attention over subtlety, with a "punchy pink" palette and a commissioned mural, per tablehopper. Seat count and pricing have not been disclosed.

What the project signals is a small but real bet: that a fast-casual format built around one portable item can carry rent on upper Polk, a stretch that leans on neighborhood regulars rather than destination traffic. Whether a novel category clicks with SF diners is the open question. The answer arrives this fall.
