Scott Baird spent years behind SF bars before the pandemic pushed him north. He worked at 15 Romolo in North Beach, opened Trick Dog in the Mission, then moved to Mendocino County during Covid. In August 2024, he opened Jumbo's Win-Win at 8651 Highway 128 in Philo — a roadside burger operation at the far end of the Anderson Valley appellation, past Boonville on the way to the Mendocino coast. The name comes from his son's nickname; the restaurant's stated ambition is simple: "Everyone wins at Jumbo's."

The place runs on uncommon precision for a roadhouse. The beef is dry-aged 30 days before it's ground to a specific 78-22 lean-to-fat ratio. The menu is tight: onion smashburgers, wedge salads, hand-cut fries served with house-made fermented chili paste. Donna's Pickle Beer on draft. Seating is outdoor, under the trees. Hours are 11 a.m. to 8 p.m. daily.

Philo is the Anderson Valley town Baird describes as "the place where you stop for groceries if you're going camping or on your way to the coast." On a recent Sunday, more than 100 guests were working through pickle dogs and pints in the afternoon light. That is not a grocery stop.

The SF Standard featured Jumbo's Win-Win today in a roundup of Northern California roadhouses worth pulling off the highway for — the first significant regional coverage the spot has received. Price point has not been widely published. Reservations are not a feature.
